Prince Harry chicken
We all know that a way to a man's heart is through his stomach, but I can assure you, if you want to win mine - cook me up some chicken and I am your girl:). Prince Harry apparently knew how to impress the *gorgeous* Meghan Markle with his roasted chicken recipe, as she said yes when he proposed after serving her his version of 'engagement chicken'. And yes, apparently 'engagement chicken' is a thing - look it up!
In celebration of Harry and Meghan's (Merry? Harghan? They need to work on their couples name:/) upcoming wedding, and because Bacon's dad brought her a massive chicken to cook, we decided to round up some friends and whip up our own version of the dish. Boys, ever wanna lock a girl down - take note!
Ingredients:
1 large chicken (~2.5 kg for 6 people)
100 g butter
1 lemon (juice and grated zest)
Garlic (2-3 cloves, finely chopped)
Thyme
3 red onions (chopped in large chunks)
Potatoes, sweet potatoes, carrots, broccoli
Salt, pepper, olive oil
How to do it:
Start with rinsing the chicken with cold water and drying it off with a paper towel.
Mix butter, two or three cloves of garlic, thyme, lemon zest, and half of the lemon juice together. Carefully loosen the skin of the chicken from the breast with your hands. Make a pocket between the skin and and the breast of the chicken and fill the butter mix in, then carefully spread the butter mix under the skin. Rub the whole chicken with oil, salt and pepper. Put the chicken in a ovenproof dish, squeeze the rest of the lemon over and put the lemons in the pan. Add one onion in chunky bits.
Put a thermometer in the breast (close to the bone) and cook in the oven at 200C for about one and a half hours, until the temperature is 67 degrees. Let it rest outside the oven for about 10 minutes until the temperature gets close to 70 degrees.
Cut all the potatoes, sweet potatoes, onions, and carrots. Add them to a dish with a little oil, salt, and pepper. Cook them in the oven for an hour. When you take the chicken out, add the brocolli to the vegetable tray, and crank up the temperature to 225C.
Whilst your waiting for the food to get ready wish your friends welcome and enjoy a glass of wine. We drank a Barbera (Pietro di Campo Silenzio Barbera 2016) with our bird, as Bubbles says: "it is a fruity and light red that goes perfectly with chicken" - it did!
